This summer, I have been obsessed with salads. I tried to make a version of a McCalister's/Panera bread salad and created this instead. In my opinion, it's even better! It also can be meal prepped for the week.
INGREDIENTS:
-2-3 cups of Romaine lettuce (or whatever you choose)
-4 ounces of chicken (I recommend either leftover grilled chicken chunks, pulled chicken, pulled rotisserie chicken, or fresh deli chicken breast)
-45 grams of Frozen Organic Corn
-65 grams of Pinto, dark red, or black beans (I prefer the Simple Truth "Tri-Bean Blend" drained)
-1 Tablespoon of Tessemae's Kitchen Buffalo Ranch
-1 Tablespoon of Kinder's Organic BBQ Sauce
DIRECTIONS:
-Start with thawing the corn and mixing it with the beans and buffalo ranch in a mixing bowl.
-On a plate, layer the lettuce, followed by the chicken, and then the BBQ.
-Add the corn, beans, and buffalo ranch mixture on top.
-ENJOY
One serving, 330 calories: 27 grams of carbs, 12 grams of fat, 19 grams of protein.
